A ‘freaking’ fabulous recipe and presentation. Thank you. I scanned the previous comments since this video is somewhat old, but could not find anything addressing my question. Would you consider cooking the cabbage in a large cast-iron skillet and if so, the only thing that might need modification is the fire or heat. Any comments on that? One of my favourite foods altogether is cabbage. But I never remove the core. Seems a waste, so I chop it even finer, then it cooks perfectly well to become as soft as the rest. My first consideration is price and often I find red cabbage a good deal cheaper than white cabbage, and I prepare it the same way. If the cabbage is big, I simply cut off what I need, and then wrap the remainder in newspaper, and stick it on the windowsill, to be cooked another day. Sometimes it takes me a week to work my way through a large cabbage, eating it as an ingredient in my breakfast porridge: cabbage + bacon + oats. Комментарий от : @castelodeossos3947 |

I have a really big (14") SS pan, basically a small commercial braiser. It works great, but a lesson I've learned is that you have to account for the fact that it will both absorb and release more heat than a small pan. So if your pan is unusually large, you have to start at a higher heat to get close to the timestamps noted in the video.
