In the end when the pirozhki are cooked and you break them apart, we can notice a large amount of empty space inside pirozhok between the crust and filling. That's because you've made two mistakes. Every russian babushka would notice it. You forgot to: 1 put in more filling 2 before baking flatten pirozhok with your palm. This way you won't get empty space. The last step (flatten them before baking) is mandatory

Oh my I just realized I've gone back to this very often&sadly forget to click but maybe cus I'm subscribed you know-but three breads without yeast are Irish soda, corn&skillet breads-since it's '23& only one grocers had king Arthur & no white wheat or AP--made my meally loaf heavy with heavier protein bread than my Arthur's bread flours-proving our little sweet girl Helen is right😉 I'm late 70's old dogs do learn new tricks GBrit(John's)grams/cups& flours so diff

Are the ingredients slightly different in the US and in your home Country? Nitin had a bakery in the Dominican Republic, and when she moved to New York she had to import the flour. I don't know if she tweaked her recipes, but there are recipes on the Internet I can't make because I can't find the ingredients.

This dish is very familiar to me. Mom's parents came from "old country" in early 1900's. Baked some a few days ago. Look the same as yours. Used hamburger/onion. Dough: Rhodes bread, works fine. Have also used sauerkraut, popular in family. Sometimes deep fry. Cheers.

look up autolease method for dough. basicly you just leave it alone for 30 minuts and you dont need to knead it. also it be great if you tried to veganify some of these recipies

I know that this might be an odd questions but I have such a small space in kitchen so I like try using bread maker machine for my dough and also cook it there but it is quite hard to find a recipe's that would work to simplify my time and small space. Do you have a suggestion that could help me on this matter? I greatly appreciate your time for your video

This recipe was perfect. I made them yesterday to be served as an appetizer for a dinner group They got rave reviews from everyone and none were left at the end. The dough was soft and rich. I liked doing the mushroom and the cabbage fillings since they were both very different. I sprinkled chopped chives on the mushroom ones when they came out of the oven so people could tell them apart. The written and video instructions were very precise. I would say these would be difficult to make if you don't have a lot of cooking experience due to how closely you need to attend to details. I did end up adding a second baking sheet underneath to prevent over browning of the bottom. Great tip which I will use again! The one thing that I did not do which I would in the future is to make the fillings a day ahead. I did both fillings, the dough and assembly in one day. The whole process took over 5 hours and I was pretty tired of standing by the end. Well worth the effort! Delicious!

Many years ago I would often get wonderful Pirozhkies at a local deli. The had a minced meat filling with a sauce or gravy for moisture in the meat. I wish you had included a meat filling. I still think of those but the deli is no longer there.

I use pre-made rolls as well and let them set for an hour and then fill them and they stay closed pretty well they are also really good stuffed with preserves

My babushka passed on when I was seven years old. But I remember loving her meat-filled piroshki. Do you have a recipe for a meat filling? I am now a senior citizen trying to put together Russian recipes for my grandchildren. I wrote down your recipe and will try it. But my memory was something more like a flaky dough - like what would be used for croissants. But, my memory could be wrong. My maternal side was British but Hungarian background. That nana lived a long time, thank heavens, so I do have her recipes. I don't have my Babushka's recipes, so the meat-filled would be very helpful. Thank you. She also made a rectangle pyrex dish of some kind of a Russian/Ukrainian apple cake - not a pie. I don't have that recipe either but remember well, running in to see if she made it when we visited. Speciba.- I don't know the Cyrillic alphabet, but I can speak a bit phonetically.

The use of Pilsbury dough to make pirozhki sounds genius and sooooo American. I used to make 'homemade' cinnamon buns with defrosted Bridgford frozen bread dough. Yeah, maybe they'd be 20% better if I made my own dough, but at a 100% more investment in time. I'd imagine the same is true of the pirozhki dough.

Oh this is so cool! I used to make pirozhki with my baba :) We don't fully seal the dough after filling though! My favourite is always kapusta - made with baba's homemade sauerkraut (fried of course! haha!).

Just made these. They are amazing. The dough is easy to work with and easier still if you do let it sit in the fridge overnight. For the filling I used mushrooms, onion and some hot sausage. Not authentic but tasty!

I found it interesting how you tweaked the recipe to make it more flavorful. I wonder if living in America has changed our tastes compared to the original countries most of us came from? I've heard that people in Japan feel that Japanese food in Hawaii (where we emigrated to) is way too salty/sweet/etc. compared with the original versions of it. And I did find the food in Kyoto (admittedly a place known for simple preparation of food) a bit bland for my taste. Anyway, thank you for your channel and how much I've learned from you!

Very true about adapting the recipes. The ingredients are so different that baking is much harder than cooking, because baking need more precise measurements. Cooking is more forgiving, and you can try the flavour as you go.

My family went crazy over the texture and taste and I too was completely blown away with the bounciness of the dough after it was baked. I highly highly recommend this recipe and Helen you are awesome!!! I am going to try some of your other recipes soon. Please try this recipe folks you won't regret it. I made my own filling with beef or chicken and mixed veggies but I followed her tip on having the filling cold when stuffing the dough and it worked perfectly! Oh I know what you're talking about in the beginning! My family integrated from Russia to Germany when I was a toddler. My father's mother was known to be a phenomenal baker, almost magical with the results, and strong in intuition. Recipe? Not for my grandma, she had it in her blood. But when we came to Germany, a lot of her baking attempts started failing. The timing, the climate, the humidity, and the flour itself seemed too different! Eventually she settled for informing us that simply, the flour is not the same here. Her daughter, my aunt, was never recreate the exact quality of her mother's goods, all the while she herself is being praised.
It's funny, isn't it? "The flour is different", indeed.

My in laws are Latvian and so I’ve learnt to make Piragi. They look just like yours except they have a bacon and onion filling. Your recipe is the first one I’ve seen that comes close to our recipe. Thank you for all your information.

Always using King Arthur flour is a good idea. It’s the best quality & consistency one can get in the US. I tried a few others over the years because I had a coupon or there was an irresistible sale price and was disappointed every time. I now only purchase King Arthur, in 10 pound bags, which go on sale often enough to be budget friendly. Quality ingredients means no waste! I’m going to try these, eventually, as I am not the best with things that use yeast. My desire to eat them is bigger than my fear of yeast 😃
